Breakfast is the meal in our geeky household. We love breakfast.
As a dad, weekend breakfasts are a sacred duty passed down to me from my father and his father before him.
Once upon a time, my weekend breakfasts were mostly donuts or pancakes, but I’ve been experimenting in the kitchen and I’ve devised some fast, fun, and (most important of all) delicious oatmeal bars!
Fast and Fun Oatmeal Breakfast Bars
Prep time: Less than 15 minutes
Bake Time: 35 minutes

Ingredients
Dry Ingredients
- 2 c. Quick Oats
- 1/2 c. Semi-Sweet Chocolate Chips
- 1 tsp. Baking Powder
- 1/4 c. Brown Sugar
Wet Ingredients
- 3 tbsp. Butter, melted
- 1 Large Egg
- 2 c. Milk
- 2 tsp. Vanilla Extract
Directions
Preheat your oven to 375° F.
Mix all of your dry ingredients in a large bowl.
Whisk all of your wet ingredients together in another bowl.
Add your wet ingredients to your dry ingredients and mix thoroughly.
You can either bake these in a 9×9 inch pan to make bars, or bake them in a cavity pan. I put mine in a six cavity skull pan for some spooky October fun!
Spray your pan with cooking spray and spoon the mixture into the pan.
Bake for 30-35 minutes, or until the mixture has set and the top is golden brown.
Let the bars cool for a few minutes, then plate them up. These are best served warm, so if you’re having leftover bars, pop them in the microwave quick to warm them up!
